The Journal of Food and Nutrition (JFN) aims to serve as a premier platform for the dissemination of high-quality research that advances our understanding of the intricate relationship between food, nutrition, and human health. With a multidisciplinary approach, the journal seeks to address pressing issues and emerging trends in the field, fostering dialogue and collaboration among researchers, practitioners, policymakers, and other stakeholders.
The scope of the journal encompasses a broad spectrum of topics within the domains of food science and nutrition, including, but not limited to:
- Food Chemistry and Analysis: Exploration of the chemical composition, properties, and interactions of food components, as well as analytical techniques for quality assessment and authenticity determination.
- Food Microbiology and Safety: Investigation of microorganisms in food, microbial interactions, foodborne pathogens, food spoilage, and strategies for ensuring food safety and preservation.
